Whole Wheat Spiced Pancakes with a Date Sauce

Serves: 4 pancakes Cooking Time: 1 hour

Ingredients

  • For the pancake:
  • 1/2 cup whole wheat flour
  • 1 TBsp baking powder
  • A pinch of salt
  • 1/2 tsp allspice or cinnamon or nutmeg
  • 1/2 cup+ 3 TBsps of almond milk
  • 2.5 TBsps of maple syrup
  • 2 TBsps of coconut oil
  • 1/2 tsp of vanilla extract
  • For the date paste
  • 7-8 small dates or 4-5 big dates(soaked in warm water for 15 minutes)
  • A pinch of salt
  • 3 TBsps of almond milk
  • 1/2 tsp of allspice or cinnamon (optional)

Instructions

For the pancakes:

Sift all the dry ingredients together

Add the wet ingredients and give the mixture a good stir(do not overmix)

Set it aside for 15-30 minutes(the longer it's set aside the fluffier it will be)

Add almond milk if the batter is too thick, add whole wheat flour if it's too thin)

Heat a pan, add butter or coconut oil and about 1/3rd cup of your batter

Let it cook on one side and then flip it over and let it cook

Cook on a medium to low heat so it cooks thoroughly and also becomes crispy from the outside!

For the date paste, add the pitted dates to a blender along with the milk, salt and spice

Blend till smooth

Strain it through a large sieve if you want a smoother consistency

Enjoy your pancakes warm with a dollop of date sauce and your favourite fruit!
