Whole Wheat Jaggery, Date & Chocolate Squares

Serves: 12 squares Cooking Time: 1 hour

Ingredients

  • Dry Ingredients:
  • 1.5 cups whole wheat flour (atta)
  • 1/4th cup cocoa powder
  • 1.5 Tsp baking soda
  • 1/2 Tsp baking powder
  • 1/2 Tsp salt
  • Wet Ingredients:
  • 1+ 1/4th cup jaggery
  • 1/2 cup oil
  • 1 cup yogurt
  • 1 egg
  • 1/2 Tsp Vanilla extract/essence
  • 3/4th cup milk
  • To fold in later:
  • 1/4th cup Dark Chocolate chips/ chunks
  • 7 dates pitted

Instructions

Sift the dry ingredients in a bowl and give them a nice stir

In a bowl whisk the jaggery and oil together

Add the yogurt, vanilla and egg and give it a good whisk till the jaggery has dissolved

Add the wet ingredients to the dry ones and start stirring

Then add the milk and stir well

Do not over mix the batter

Add the chocolate chips/chunks and torn up dates to the batter and fold them in

Preheat the oven to 180 degrees C

Line a 9 inch circular cake tin or a square tin with oil/butter and flour

Add the batter and bake for 35-40 minutes or till the skewer/knife comes out clean

Cool the cake or enjoy warm!
