Vegan Oat & Flaxseed Pancakes

Oatmeal Vegan Pancakes

Serves: 6 pancakes Cooking Time: 20 minutes


  • 2 tablespoons of flax seeds (grind seeds to a fine powder)
  • 6 tablespoons of water
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons of maple syrup
  • 2 tablespoons of coconut oil or a neutral tasting oil
  • 1+1/4th cup of almond milk or nut milk of choice
  • 1/2 cup of oats (any variety) (ground to a find powder)
  • 1/2 cup of whole wheat flour
  • 1/2 tablespoon of baking powder
  • 1/2 teaspoon salt



Start by finely grinding the flax seeds into a fine powder, add the powder to a clean bowl and mix it with the water, stir and let it sit for at least five minutes till it forms a thick gel like consistency


In a separate bowl sift together the ground oats, baking powder, salt and whole wheat flour, mix and set aside


To the flax gel mixture, add the vanilla, oil, maple syrup and milk and stir well


Add the dry ingredients to the wet ingredients and gently fold the mixture (do not over mix at this point, it's okay if there are a few clumps)


Heat up a pan, add some oil to the pan and spoon in some of the batter


Cook the mixture on a low heat, 3-4 minutes on each side, this will ensure the right browning and the mixture being cooked throughout


Drizzle with more maple syrup, add some fresh fruit and enjoy!
