Vegan Almond Milk Fluffy Pancakes

Serves: 6 Pancakes Cooking Time: 30 minutes

Ingredients

  • 2 cups of flour(maida)
  • 2 tablespoons baking powder
  • 1/2 cup+ 2 tablespoons of maple syrup/honey
  • 1/4th cup coconut oil
  • 1 teaspoon salt
  • 2 cups unsweetened almond milk
  • 2 teaspoons vanilla extract

Instructions

Sift the flour, baking powder & salt in a bowl and stir it

In a separate bowl add the oil, maple/honey, almond milk & vanilla and mix well

Add the dry ingredients to the wet ones and mix well till there are almost no lumps in the batter

Keep this mixture aside for a minimum for 2 hours and maximum of 4 hours in the refrigerator(the longer you let the mixture set, the fluffier the pancakes)

Once the mixture has set, check the consistency by mixing it up

If it’s too thick add some almond milk to make it smoother

Heat up a non stick pan, you can add butter or coconut oil to the pan

Once it’s hot add the pancake batter and cook both sides until golden brown

Top up you pancakes with fresh berries, butter, maple syrup, Nutella, vegan chocolate butter, nut butter, anything you like and enjoy it warm🍓🍫
