Super simple pistachio crusted fried ice cream

Ice cream is hands down my favourite dessert and I love experimenting with it, be it with the flavours or the form it is eaten in. I came across the concept of fried ice cream which is pretty common in a lot of Asian countries and they usually make it using tempura batter. I decided to give this a slight Indian touch by making a pistachio+cake+cardamom fried ice cream. Follow the steps to make your own yummy treat.

Super simple pistachio crusted fried ice cream

Serves: 6 scoops Cooking Time: 1 hour


  • 6 scoops of your choice of ice cream (I used Vanilla)
  • 2 cups of crushed cornflakes
  • 1/2 cup crushed pistachio(you can substitute it with a nut of your choice)
  • 1 tsp cardamom
  • 2 eggs
  • 2 round vanilla cakes(you can purchase it from a local bakery or general store)



Step 1: Scoop the ice cream and freeze it overnight or until firm


Step 2: Cut the round vanilla cake into 3 round slices(one for each scoop)


Step 3: Mix the crushed cornflakes, pistachio and cardamom


Step 4: Beat the 2 eggs


Step 5: Wrap each firm ice cream scoop in a vanilla cake-- coat with the egg--coat with the cornflakes mixture--refreeze for 2-3 hours


Step 6: Fry it in hot oil until golden brown


Step 7: Serve immediately with whipped cream or fresh fruit
