




Preheat the oven to 220 C/450 F Start by making slits in the potatoes, place chopsticks/wooden spoons below the potato to help guide you Make the slits, leaving 1/2 an inch uncut so as to hold the potato together Melt butter with olive oil in a pan Add the chopped garlic, once the garlic starts sizzling turn the heat off and let the mixture sit for 10-15 minutes Add the paprika/chilli powder, nutmeg, pepper and any other spice you'd like to this mixture Strain the mixture and drizzle it all over the potatoes, make sure it gets inside the slits you make Sprinkle salt properly (this depends on how salty your cheese is) Stuff the potato with grated/sliced cheese of your choice Place on a baking tray lined with parchment and bake at 220 C for 30 minutes Lower the oven temperature to 180 C and bake for another 30 minutes or until potato is cooked through (when you insert a knife in the potato it should come out without any resistance Enjoy with sour cream/greek yogurt/mayo!
