Sourdough Pancakes

Sourdough Pancakes

Serves: 6-8 pancakes Cooking Time: 20 minutes

Ingredients

  • 1/3rd cup sourdough starter
  • 1/2 cup + 1/4th cup regular all purpose flour (maida)
  • 4 TBsps sugar/honey/maple syrup
  • 1/4th cup buttermilk
  • 2 eggs
  • 1/2 t baking soda
  • 1/2 t salt
  • 3 Tablespoons melted butter/coconut oil
  • 1/2 t vanilla extract (optional)
  • Zest of 1 lemon (optional)

Instructions

Start by mixing the buttermilk, sourdough starter, flour and sugar in a bowl

Mix gently till well combined

Cover the bowl and leave it on your counter overnight

The next morning in a separate bowl whisk together eggs, salt, vanilla, lemon zest and butter together till well combined (butter should be melted and cooled)

Add these ingredients along with the salt to your starter+flour+sugar+buttermilk mix and gently fold it in (don't over mix at this stage)

Heat up your pan, keep it on a medium heat

Grease with butter/coconut oil/any other oil

Using a 1/3rd cup measuring spoon, scoop out your pancake mix and pour it onto the hot pan

Cook for 1-2 minutes on one side till bubbles start forming on the surface facing up

Flip the pancakes and cook for 3-4 minutes (turn the heat down to low if the pan gets too hot)

Serve hot with butter, maple syrup or a fruit compote!
