Get a pot of water boiling and add some salt in the pot Cut the green part of the cauliflower and divide the head into small to medium sized florets Once the water is boiling add the cauliflower florets for one minute (Process of blanching) Remove from the hot water and run the cauliflower under cold water to cool it down Preheat the oven to 200 degrees C Using a paper towel dry the cauliflower florets Toss them in some olive oil and lay them out flat on a greased baking sheet (you can put some parchment paper down instead too) Roast the florets for 20 minutes first, flip the pieces on the other side and roast for another 10-15 minutes till you see nice charring on them For the dressing add the spices, minced garlic and honey to the yogurt and mix well. Add salt and lemon/lime as per your liking Drizzle the dressing over the charred roasted cauliflower and enjoy! Fun fact: Turmeric when consumed with black pepper increases the absorption of healthy nutrients turmeric has to offer by 2000% Whenever you consume turmeric, make sure you add a pinch of black pepper in it too!
