Quinoa Pulao

Quinoa Pulao

Serves: 2 bowls Cooking Time: 30 minutes

Ingredients

  • 1/2 cup quinoa
  • 1 cup stock/water
  • 1 small onion
  • 1 thumb ginger
  • 2 cloves of garlic
  • 1 chilli
  • Spices: 1/2 teaspoon each cumin seeds, fennel seeds, turmeric powder, chilli powder
  • 1/4th of a cinnamon stick, 2 pods of cardamom, 1 clove, 1/2 a star anise, 4-5 peppercorns (Toasted and ground spices or Use 1/2 a tablespoon of garam masala instead)
  • Veggies:
  • 1 small tomato
  • 1/4th red pepper
  • 1 carrot
  • 1/4th cup peas
  • Garnish(optional):
  • Fried onion
  • Mint & coriander leaves
  • Lime Juice
  • Cashews
  • Raisins/Barberries/Cranberries

Instructions

Start by toasting spices(cinnamon, cardamom,clove,star anise, peppercorns, fennel seeds) lightly on a pan and grinding to a fine powder( if using ready garam masala skip this step)

Rinse quinoa 2-3 times thoroughly and set aside, use a mesh strainer for ease

Start by adding 1 tablespoon of oil or ghee to a hot pot

Add the onions and cook for 5-8 minutes on a low heat till translucent

Add cumin seeds and let them bloom

Add firmer veggies like carrot and bell pepper and saute for one minute

Add tomato, stir in well

The dry spices go in next, chilli powder, turmeric powder and powdered spice blend/garam masala

Saute for 30 seconds

Add the washed and drained quinoa and toast for one minute

Add the 1 cup of stock/water

Turn the heat to high, bring the mixture to a boil

Once it starts boiling, turn down the heat to low, put a lid on the pan and let the pulao cook for 15 minutes (Stir occasionally to avoid the quinoa from sticking to the pot)

Turn off the heat after 15 minutes and let the mixture sit in the pot with the lid on for 10 minutes

Add the peas, cashews, raisins/barberries, mint and lime juice

Using a fork mix the pulao well

Top up with fried onion, more fresh herbs and serve hot!
