Parsley & Basil Pesto Pasta

Serves: 2 bowls Cooking Time: 30 minutes

Ingredients

  • Pesto:
  • 3 cloves garlic
  • 100 gms basil leaves
  • 50 gms parsley
  • 3 TBsp parmesan cheese (grated)
  • 2 TBsp olive oil
  • Salt & Pepper to taste
  • 50 gms pine nuts(toasted)
  • (optional): Cherry tomatoes, Broccoli, Zucchini or any other veggies you'd like

Instructions

For the pesto sauce: Toast the pine nuts on the stove till golden brown

Blend the pine nuts, garlic, basil, parsley, salt and pepper together

Add the grated cheese and olive oil and give it a good blend till smooth

(Add more oil if you find it too dry)

For the pasta: Boil your pasta till al dente

Add some olive oil to the pan, add garlic and the veggies

Saute for 2 minutes, add your pesto sauce and cook it

Add in your pasta and mix well

Take it off the heat once the pasta is coated in the sauce
