Overnight Almond Milk Chia Pudding with Coconut Flakes

The best part about breakfast pudding is that you can eat it for breakfast or dessert. I recently made this chia seed+almond milk pudding that I cannot stop binge eating. Follow the recipe below for your healthy pudding fix!

Overnight Almond Milk Chia Pudding with Coconut Flakes

Serves: 1 cup Cooking Time: 20 mins

Ingredients

  • 50 gms almonds (soaked for 4-5 hours)
  • 3-4 dates (soaked for 2 hours)
  • 2 TBS Chia seeds
  • 1/2 TBS honey(add more if you like it sweeter)
  • 1/2 teaspoon cinnamon
  • Your favourite toppings(I used pomegranate & coconut flakes)

Instructions

Step 1: Crush the peeled almonds and dates together

Step 2: Strain in a muslin cloth (re-crush post straining to avoid wastage)

Step 3: Add the chia, honey and cinnamon

Step 4: Soak overnight or for 4-5 hours atleast

Step 5: Top it with your fav fruits and eat it for breakfast or as a dessert ??‍♀️

Notes

You can even add rolled oats and more of the almond milk. It tastes really good, especially with fresh fruits.
