Oat Banana Chocolate Muffins

Serves: 6 Muffins Cooking Time: 1 hour

Ingredients

  • 1.5 cups oats (I use a blend of 1 cup rolled oats and 1/2 cup quick oats)
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 3 Bananas
  • 2 eggs
  • 1/2 cup almond milk or regular milk
  • 1/4th cup coconut oil or a neutral tasting oil
  • 2 tablespoons of honey or maple syrup
  • 1/2 tsp vanilla extract
  • 1/4th cup chocolate chips
  • 1/2 tsp cinnamon powder(optional)
  • 1/2 tsp nutmeg powder (optional)

Instructions

In a bowl mix the oats, baking soda, baking powder and salt

In a separate bowl mash up the bananas, add the eggs and give it a good whisk

Whisk in the oil, honey, milk and vanilla extract

Add the wet ingredients to the dry ones and stir well

Fold in the chocolate, cinnamon powder and nutmeg powder

Add to your muffin ramekins and bake at 180 degrees C for 25-30 minutes or until the skewer comes out clean
