No-Bake Mango Coconut Vegan Tart

Ingredients

  • Ingredients: (Base)
  • 1 cup pistachio
  • 1+ 1/4th cup desiccated coconut
  • 2 TBs Coconut Oil
  • 2.5 Medjool dates or 5 regular dates
  • 1/2 tsp salt
  • Filling:
  • 1+1/4th cup cashew nuts(soaked for minimum 4 hours)
  • 1+ 1/2 cup diced mangoes
  • 150 ml coconut cream
  • 3 TBs honey/ maple syrupšŸ
  • 3 TBs coconut oil
  • 2 TBs lime juice

Instructions

Blend all the ingredients for the tart into a course texture.

Grease a tart tin and press the mixture till evenly spread out.

Freeze the base for 30 minutes.

For the filling blend all the ingredients until smooth and creamy add the mixture to the tart base and set for a minimum of 3 hours(the longer the better)

Top it up with fruits, some desiccated coconut and fresh mint leaves and your tart is ready!
