French-styled Lavender Ice Cream

Lavender French styled Ice cream

Serves: 6 scoops


  • 4 egg yolks
  • 6-8 tablespoons of powdered sugar(depends how sweet you like it)
  • 1/2 teaspoon salt
  • 250 ml whole milk (make sure to use whole full fat milk)
  • 400 ml whipping cream
  • 1/2 teaspoon Vanilla extract (you can use vanilla essence or one fresh vanilla bean too)
  • 1/2 a tablespoon edible Lavender



In a deep pot add the milk and cream, give a gentle mix and keep the mixture on low heat


In the meantime separate your eggs and put the yolks in a heatproof bowl


Add sugar and salt and whisk the eggs for a minute or two till it turns a lighter shade of yellow and it silky smooth


Turn off the heat when the milk+cream mixture comes to a simmer


Keep whisking your eggs in the bowl and slowly add 5 tablespoons of the hot milk and cream mixture


Keep whisking continuously so as to avoid cooking the eggs


Once mixed thoroughly add the egg mixture back to the hot milk+cream mixture and keep whisking continuously (whisking is important so that the eggs don't get cooked)


Put the heat on low, keep whisking and let the mixture cook for about 2-3 minutes


To check if the mixture has reached the right temperature put any spatula or spoon into the mixture, the back of the spatula or spoon should be coated by the custard mix


To double check, you can also vertically swipe your finger across the back of the spoon. If it stays clean then your mixture is ready


In case there are any pieces of egg in your mixture just strain it out


Add the vanilla essence and edible lavender(I like crushing the lavender in a mortar and pestle to release the flavour)


Keep the lavender soaked in the mixture for about 30 minutes and strain it out


Once the mixture is at room temperature, cover it with clean film or foil and refrigerate it overnight. It needs to be super chill before you put it in the ice cream maker


As per the manufacturers instructions make your lavender ice cream in your ice cream maker!
