Healthy Sneaky Banana Chocolate Muffins

Sneaky Banana Dark Chocolate Muffins with a bunch of healthy ingredients like sweet potato, carrot, oats, sunflower and chia seeds perfect for a quick breakfast, evening snack or even dessert. Follow the recipe to make a batch of 6 muffins:

Healthy Sneaky Banana Chocolate Muffins

Ingredients

  • 1/2 cup whole wheat flour
  • 1/4th cup regular flour (maida)
  • 3 TBs oats (rolled or quick)
  • 1 t baking soda
  • 1/4th cup mashed banana
  • 1/2 cup mashed sweet potato
  • 1/4th cup sugar
  • 1/4th cup vegetable oil
  • 2 eggs
  • 1/4th cup grated carrot
  • 1 thumb ginger- grated
  • 1 t cinnamon powder
  • 2 TBs sunflower seeds
  • 2 TBs nuts (I used pecans)
  • 1 TBs chia seeds
  • 1/3rd cup chocolate chips (dark or milk)
  • A pinch of salt
  • Orange zest

Instructions

Sift the whole wheat flour, regular flour, salt,cinnamon powder and baking soda together

Add the oats to the dry mixture

In a separate bowl blend together eggs, sugar, oil, mashed banana, mashed sweet potato, orange zest, ginger, carrot and whisk till combined

Add the dry ingredients to a bowl of wet ingredients

Fold in your nuts, seeds and chocolate

Divide the mixture equally in a muffin tray and bake at 180 degrees C for 15-20 minutes or until the knife comes out clean when inserted in the middle
