Guacamole with Rosemary Ragi Crackers

Serves: 1 small bowl Cooking Time: 20 minutes

Ingredients

  • 1 ripe avocado
  • 1/2 fresh jalapeño (deseeded & chopped) or 1 small spicy green chilly
  • 2 tablespoons diced onions
  • Juice of 1/2 a lime
  • 1/4th cup coriander
  • Salt to taste
  • 1 teaspoon cumin powder
  • 1/4th cup tomato (diced)
  • For the crackers:
  • 1/2 cup ragi/nachni flour
  • 1/2 cup whole wheat flour
  • 2-3 teaspoons salt
  • 2 Tablespoons of ghee
  • 10-15 sprigs of rosemary(optional)

Instructions

For the Guacamole:

Add the Jalapeño's/green chillies, one and a half tablespoons of the onion, lime juice, salt, cumin and coriander to a mortar/ blender

Crush/Blend the mixture(do not make it a fine paste let it be a bit coarse, it'll give a nice bite)

Add this mixture to a clean bowl, add one avocado and mash it up well

Fold in the tomatoes and adjust for lime and salt

For the crackers:

Mix the two flours along with the salt and add ghee to the mixture

Mix well. Add the rosemary and give it a stir

Slowly add water and turn the mixture into a dough

Once the dough is ready, start rolling out the dough. The thinner it is rolled out, the crispier your crackers will be

You can use any mould to shape it(I use a small sized bowl to make circles)

Place them on a very well greased baking tray (you can use ghee or oil to grease the tray)

Use a fork to create holes on one side of the crackers

Bake them for 8-10 minutes on one side at 180 degrees C, flip them over and bake for another 5 minutes

Cool them down completely, enjoy them with your favourite dip or as it is!
