Start by cooking the quinoa, rinse it three times, add quinoa to a pot, add double the quantity of water, bring to a boil Once boiling, turn to a simmer, cover the pot and simmer for 15 minutes Turn off the heat and let it sit for 5 minutes covered Cool the quinoa down to room temperature before using it in the recipe Preheat the oven to 180 C Sift the flour, baking soda, baking powder, salt and cinnamon and set the ingredients aside In a separate bowl, whisk together oil, sugar,orange zest & vanilla till well combined (about 3 minutes) In a separate bowl mix the yogurt & milk together, set it aside To the sugar+oil mixture, add the dry ingredients and the yogurt+milk mixture alternatively following this order: 1/3rd dry mix, 1/2 yogurt+milk mix, 1/3rd dry mix, remaining yogurt+milk mix, remaining dry mix (Slowly fold, don't overmix) Mash bananas in a bowl Fold in the mashed bananas, cooked quinoa and chocolate chips Add the batter to a greased 8" loaf tin( you can alternatively line the tin with parchment paper) and garnish with reserved quinoa and chocolate chips/chopped chocolate Bake for 40-45 minutes or until the skewer comes out clean Enjoy warm!Banana Quinoa Bread with dark chocolate
