Easy Brown Butter Whole-Wheat Chocolate Chip Cookies

Ingredients

  • 1/3rd cup melted butter-browned (75 gms cold butter= 1/3rd cup melted butter)
  • 3 tablespoons cold milk
  • 1/2 cup sugar
  • 1 egg at room temperature OR 1 tablespoon ground flax seeds mixed with 3 tablespoons of water OR 1/4th cup greek yogurt
  • 1/2 tsp vanilla extract
  • 1 cup whole-wheat flour(atta)
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/2 cup dark chocolate chips or chopped chocolate

Instructions

Start by browning the butter

Add butter to a pan/pot and on a low to medium heat melt it, stirring regularly

The butter will start to foam up, keep stirring continuously and once you see brown specs in the butter and it smells nutty turn off the heat

Transfer this mixture to a heat proof bowl

Add 3 tablespoons of cold milk to the butter mixture, this will help cool it down

Add the sugar and whisk it in the butter, whisk for about a minute

Once the mixture is cool, add in the egg and whisk well

Add the vanilla extract & mix it in

Sift the dry ingredients in this bowl of wet ingredients: whole-wheat flour, baking powder & salt

Fold the mixture

Fold the chocolate in the cookie dough

Pop this mixture in the freezer for 30 minutes, alternatively you can refrigerate it for 2 hours

Preheat the oven to 190 C

Using a spoon/measuring cup or ice cream scooper, scoop out medium sized cookie dough balls (golf ball sized) onto a baking tray lined with parchment paper

Slightly press the cookie dough mixture down

Add more chocolate if you'd like! You can sprinkle some sea salt too!

Make sure your oven rack is in the centre

Bake in a preheated oven for 15-20 minutes or until the sides are golden brown

Cool the cookie slightly and enjoy!
