Dark Chocolate Cake with Cream Cheese Frosting & Pecan Praline

Serves: 8 Cooking Time: 50-60 minutes

Ingredients

  • All Purpose Flour (Maida): 1 cup + 1/4th cup/ 203 grams
  • Whole Wheat Flour: 1/4th cup + 2 Tablespoons/ 67 grams (Can be substituted with more All purpose flour)
  • Baking Soda: 1/2 Tablespoon/ 8 grams
  • Salt: 1/2 teaspoon/ 3 grams
  • Sugar (Cane or castor sugar): 1 cup + T tablespoon/ 218 grams
  • Vegetable Oil: 3/4th cup/ 160 grams
  • Eggs : 2 whole eggs
  • Hot Coffee(Instant or Brewed): 1.5 cups/ 290 grams
  • Cocoa Powder: 3 Tablespoons/ 23 grams
  • Vanilla extract: 1 Tablespoon
  • Vinegar: 2.5 Tablespoons/ 29 grams
  • Dark Chocolate( I used 65% dark chocolate)(Chopped chocolate/chocolate chips): 1/3rd cup/ 69 grams

Instructions

Preheat the oven to 350 F/ 180 C

Grease an 8" or 9" cake tin

Melt the chopped chocolate/chocolate chips either in the microwave or over a double boiler, set it aside

Sift the flours,baking soda & salt & set it aside

Mix the hot coffee with the cocoa powder & set aside

Using a stand mixer/hand mixer/hand whisk, whisk the vegetable oil & sugar together till well combined

Add the eggs one at a time and whisk vigorously to combine and to add air to the batter

Whisk this mixture for 4-7 minutes

The mixture should go light & pale,

Let the mixture sit on the counter for 10 minutes

Add the melted chocolate & vanilla & whisk well to comibine

Add the sifted dry ingredients & brewed coffee+ cacao mixture alternatively

Start with 1/3rd of the dry, add 1/2 the coffee and fold it in

Add another 3rd of the dry, remaining coffee and fold it in

Add the remaining 1/3rd dry and gently fold it in

Add the vinegar towards the end and fold it in

Immediately transfer to the cake tin and bake in a preheated oven for 45-60 minutes or until the skewer comes out clean

Cool it down, frost it and enjoy!
