Chickpea Kebabs

Serves: 10-12 kebabs Cooking Time: 1 hour

Ingredients

  • 1 cup chickpeas- boiled
  • 1/2 cup boiled, mashed potato
  • 1 shallot or 1/4th red onion
  • 1/2 cup coriander leaves
  • 1/4th cup mint leaves
  • 1/2 cup parsley leaves
  • 3 tablespoons chickpea flour
  • 1 teaspoon baking powder
  • 1/2 a green chilly (increase or reduce depending on your preferred spice level)
  • 3 tablespoons olive oil or any vegetable oil
  • Spices:
  • Salt to taste
  • Black Pepper (1tsp)
  • Turmeric(1tsp)
  • Chilli powder (1tsp)
  • Cumin powder(2tsp)
  • Coriander powder(2tsp)
  • Amchur powder/Raw Mango powder(2tsp)
  • Garlic powder(2tsp)
  • Ginger powder(1tsp)

Instructions

Rough chop the shallot/onion, green chilli and the herbs (coriander, mint, parsley)

In a food processor pulse all the ingredients except the flour and baking powder

Scrape down the bowl in every few pulses

Once the chickpeas have broken down into a mash and the mixture looks homogenous. transfer the mixture to a bowl

Sprinkle the flour and baking powder and mix it in the mash till well incorporated

Let the mixture sit for at least 30 minutes so the flour can hydrate

Preheat the oven at 400 F/ 200 C

Using a spoon or ice cream scoop, scoop the mixture into golf ball sized rounds and place on a line baking sheet

Bake for 25-30 minutes until the kebabs start to brown

Take them out of the oven and brush some melted butter or ghee on them

Enjoy warm!
