Cauliflower Fried Rice

Ingredients

  • 1 medium head of Cauliflower
  • 3 cloves of garlic
  • 3 teaspoons of grated ginger
  • 3 pieces spring onion (whites only)
  • 1 small carrot, diced
  • 1 small onion, diced
  • 1/4th of a bell pepper
  • 1/2 a celery stick
  • 1/2 cup mushrooms
  • 1/4th cup corn
  • 2 teaspoons sugar or honey
  • 3 TBsps soy sauce
  • 2 TBsps Sambal sauce (or any chilli sauce/chilli paste)(adjust the quantity depending on your spice tolerance)
  • 1.5 TBsp vinegar
  • Salt & Pepper to taste
  • 1 egg (optional)
