Banana french toast with a berry compote

Serves: 4 Cooking Time: 20 minutes


  • To make French toast:
  • 1 ripe banana
  • 2-3 slices of bread(depending on the size of each slice)
  • 2 eggs
  • 1/2 tablespoon regular milk or any nut milk
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • To make berry compote:
  • 1/2 cup blueberries or any berry of your choice
  • 1 tablespoon lemon zest
  • 1.5 tablespoons lemon juice
  • 1 tablespoon sugar
  • 1-2 tablespoons water



For the French toast:


Mash the banana in a bowl(the more ripe the better) add all the other ingredients and whisk properly till most of the banana and blended in


Heat up some butter or coconut oil in a pan, coat and soak the bread slice for 30 seconds and fry on the pan


Top up with nut butters or fruit compote or plain old butter & maple syrup! Enjoy warm


For the compote:


Add all the ingredients to a pan and cook till the berry is as soft as you like(add the water one tablespoon at a time, start with a single tablespoon and halfway through add more as required) keep stirring the mixture at regular intervals


Enjoy over French toast, pancakes, waffles or any dessert!
