Banana Date Chocolate Brownies with a Tahini Swirl

Serves: 9-12 brownies Cooking Time: 15 minutes

Ingredients

  • 1/2 cup dates (around 8-10 medium sized dates or 5-6 large ones)
  • 1/2 cup neutral tasting oil (I used canola oil)
  • 1/4th cup cocoa powder
  • 2 eggs (at room temperature)
  • 2 overripe bananas(medium sized)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1.5 cups all purpose flour (maida)
  • 1/4th teaspoon baking powder
  • 1/2 cup chocolate chips/chopped chocolate
  • 4 tablespoons tahini paste

Instructions

Preheat the oven to 180 C

Start by creating a date paste, add the dates with 1/2 cup of water and bring the mixture to a simmer

Using a whisk/spatula bread down the dates by pressing on them as they simmer and mix well to create a paste

Add this mixture to a mixing bowl and immediately add the 1/2 cup of oil, whisk it in

Add cocoa powder and whisk well

Let the mixture cool down a bit

Add the eggs one at a time and whisk well

Add the mashed overripe bananas along with vanilla extract and whisk well

Fold in the dry ingredients: baking powder, flour & salt

Fold in the chocolate chips/chopped chocolate

Add the mixture to a 9 x 9" tin lined with parchment paper

Add the batter and smoothen it out

Add 4 tablespoons of tahini to 4 sections of the batter (one tablespoon in every column)

Using a toothpick or knife create swirls in the batter evenly spreading the tahini

Bake in a preheated oven for 15-18 minutes

The skewer shouldn't come out clean it should be fudgy
