Avocado Mac & Cheese

Are you bored of basic Mac & Cheese just like I am? Well I took my avocado obsession up a notch and made this Avocado Mac & Cheese with fresh jalapeño peppers. Follow the recipe below to make your own mac & cheese fix.

Serves: 3 medium bowls Cooking Time: 30 mins

Ingredients

  • 1 cup macaroni
  • .
  • (For the cheese sauce)
  • 2 TBs butter
  • 1 clove of garlic
  • 1+1/2 TBs white flour
  • 3/4th cup white cheddar
  • 1 cup milk
  • Salt & Pepper to taste
  • .
  • (For the avocado sauce)
  • 1+1/2 avocado
  • 1 TBs lime
  • 1/2 cup fresh coriander or basil
  • 1/2 tsp cumin powder
  • Salt & pepper to taste
  • 2 fresh jalapeño peppers (optional)

Instructions

Step 1: Boil your macaroni in boiling water with some salt and oil(to prevent it from sticking)

Step 2: In a pan add butter and garlic and saute for less than a minute. Add the flour, cook it and then slowly add in the milk.

Step 3: Mix till you get a smooth mixture. Add more milk if the mixture is too clumpy.

Step 4: Add the white cheddar, salt and pepper. Your cheese sauce is ready.

Step 5: To make the avocado sauce, blend all the sauce ingredients: Avocado+lime juice+coriander/basil+salt+cumin+pepper

Step 6: Put the macaroni in a bowl and mix in the cheese and avocado sauce. Top up your mac & cheese with more cheese (I used red cheddar) and the jalapeño peppers and bake it for 5-10 minutes or until the cheese has melted at a 180 degree C temperature.

Notes

You can increase the quantity of the avocado if you want it to be more creamy. P.S. After adding plenty of milk, if your cheese sauce is still clumpy you can event strain it to smoothen it out.
