Ingredients

  • 1/2 cup oats
  • 2 cups liquid veg stock/water
  • 2 cloves of garlic
  • 1-2 chillis (depending on your spice tolerance)
  • 2 teaspoons soy sauce
  • 2 spring onions
  • 1/2 cup mushrooms
  • 1/2 a carrot
  • 1/2 a bell pepper
  • + any vegetables you’d like!
  • Salt to taste

Instructions

Start by heating up some oil in a pot, add the mushrooms and sauté for 3-4 minutes till the mushrooms get a nice colour on them

Add minced garlic, chilli & spring onion(only the white part), add carrot & bell pepper and sauté for another 2 minutes

Add in the oats and toast them for another 2-3 minutes

Add the liquid and cook till oats are soft(keep stirring regularly or else the oats will stick to the bottom of the pot)

Once cooked top it up with the green part of the spring onion. I also added some toasted cashews and chili flakes!
